Wife just made me like 20 chile rellenos from scratch. She also made a huge batch of rigatoni with turkey and spinach. Roasted potatoes. Fried chicken. Cowboy caviar. Yams and marshmallows for dessert.
That’s lunches and dinner for the whole week, with some salads thrown in the mix.
I played sous-chef in all of this, and am about to test the yams. Glass (or two) of crown and coke, and Matrix playing on Plex. Good night indeed.

Chile rellenos are amaZeballs. I had to visit UB to see what plox meant -we just shared with my parents (they live across the street), and I’d share if you were here :). We love sharing food with friends.

I’ve never seen them fired in eggroll wrappers before. That’s a great idea that I’m going to have to steal for next time.

Yup, it makes them way easier to make. Wife got the recipe a while ago and it works like a charm.
She found a road side stand with roasted green chiles (living in Colorado is awesome) and that’s what we used. Super tasty!
